Welsh Lamb Shank Casserole

This is a very hearty and full of flavor casserole. It can be made ahead of time, but it’s best to serve this hot from the oven with some fresh bread or biscuits on the side. The meat mixture in this recipe also makes for a great shepherd’s pie filling as well!

This casserole is made with lamb shanks, which are braised in a rich tomato sauce.

It’s that time of year again, when I need substantial comfort food. Slow-cooked meats, delectable casseroles, and mashed potato bowls Delicious! If it seems like your cup of tea, you’ll like this recipe as well.

Welsh lamb shanks gently cooked in a delicious red wine casserole in the oven until the flesh falls off the bone. This dish may seem and sound difficult, but trust me when I say it’s not!

I’ve been working with PGI Welsh Lamb for a few years now, and the quality of the meat from Wales never ceases to amaze me. Welsh sheep and cattle, unlike more intensive and industrial farming practices in other areas of the globe, are primarily grown on the land’s natural resources of grass and rainfall, making Welsh Lamb sustainable and low-impact on the environment.

In terms of nutrition, red meat is an essential component of a well-balanced diet. Welsh lamb is strong in iron, Omega 3, Vitamin E, and beta carotene, as well as being a significant source of protein.

So, on to the recipe… I really meant it when I said this was simple! The Welsh Lamb shanks must first be seasoned before being browned in a casserole dish. Then remove the onion, garlic, carrots, and celery and put them in.

After adding some flour to thicken the sauce, add the stock, wine, tomato puree, and fresh herbs. Bring to a boil, then return the lamb shanks to the pan and place the dish in the oven.

Turn the shanks halfway through and add some button mushrooms.

In this recipe, the oven performs all of the heavy lifting. The outcome is wonderfully cooked lamb shanks, crisp and crusty on the exterior with the most soft and luscious flesh on the inside, after 2.5 hours in the oven.

The sauce is thick and flavorful, thanks to the lamb, red wine, and veggies.

Mashed potatoes are the ideal side dish for this recipe, soaking up all of the delicious sauce and ensuring that you don’t squander any of it.

I also serve some cooked kale on the side. A freshly cooked green vegetable completes the meal well.

Casserole of Welsh Lamb Shanks


Description

Ingredients

  • 4 Shanks of Welsh Lamb
  • a pinch of salt and pepper
  • 2 tbsp olive oil
  • 1 diced onion
  • 2 smashed garlic cloves
  • 3 carrots, peeled and sliced into rounds
  • 2 celery sticks, peeled and chopped
  • 3 tablespoons flour
  • 500ml stock (lamb or beef)
  • 350 milliliters red wine
  • 2 tbsp pureed tomatoes
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 200g shiitake mushrooms

Serve with mashed potatoes and kale.


Instructions

  1. Preheat the oven to 160 degrees Fahrenheit (fan forced).
  2. Pat the dry lamb shanks dry with kitchen paper and then season generously with a pinch of salt and pepper.
  3. In a large casserole dish, heat the oil and add the lamb shanks.
  4. Cook for approximately 10 minutes, rotating once, until both sides are lightly browned.
  5. Remove the lamb shanks from the casserole and set them on a platter to the side.
  6. Cook for 3 minutes with the onion, garlic, carrots, and celery in the dish’s oil.
  7. Cook for another minute after adding the flour and immediately mixing it in.
  8. Mix in the stock, wine, tomato puree, and herbs well.
  9. Bring the mixture to a boil, then remove it from the heat.
  10. Return the lamb shanks to the casserole dish and bake for another 30 minutes.
  11. Cooking time is 2.5 hours. Turn the lamb shanks over halfway through the cooking time and add the button mushrooms whole.
  12. Serve with mashed potatoes and fresh kale that has been cooked.

Notes

This dish is best served right away, but it will keep in the fridge for up to two days. Remove the meat off the bone and reheat until piping hot in the microwave or oven.
