Slow Cooker Sun Dried Tomato Chicken & Pasta

This week I’m working my way through a huge batch of sun dried tomatoes and pasta! It’s been so easy to prepare, I’ve got the noodles done in less than 5 minutes. The best part? This dish takes only 6-8 hours on low or 4-6 hours on high!

The “slow cooker sun dried tomato chicken pasta” is a recipe that is perfect for any busy day. It’s easy, it’s healthy and it tastes amazing.

Even if the weather is beginning to warm up, that doesn’t mean it’s time to put your slow cooker away. There are a variety of lighter dishes that you may prepare in it that are ideal for Spring and Summer.

The ideal example is this slow-cooked chicken in a creamy sun-dried tomato sauce. It’s quite simple to prepare; just combine all of the Ingredients in a slow cooker and simmer for a few hours, and you’ll have a delicious family supper ready to serve over baked pasta.

Onion, garlic, dried basil, canned tomatoes, sun dried tomatoes, water, and cornflour are among the components. In a slow cooker, combine all of these Ingredients, then top with chicken breasts.

Season the chicken with a pinch of salt and pepper and cook for 3.5 hours on high or 5 hours on low, flipping halfway through.

When it’s done, add a dollop of cream fraiche and serve. As a consequence, you’ll have a lovely, creamy tomato sauce. The sun dried tomatoes give a lot of flavor without requiring a lot of Ingredients.

The chicken breasts will still be whole at this point, but you may shred them with two forks in the sauce if you wish.

This could be a better alternative for kids who don’t like for chicken and would rather have it mixed up with the sauce.

Serve the chicken and sauce over cooked pasta, or serve with plenty of green vegetables or a salad for a lighter alternative for adults.

Slow Cooker Sun Dried Tomato Chicken & Pasta


Description

A delectable chicken meal with a creamy sun dried tomato sauce cooked in the slow cooker. It’s ideal for a quick midweek lunch that the entire family will enjoy.


Ingredients

  • 1 diced onion
  • 2 chopped garlic cloves
  • 1 tsp basil (dried)
  • 1 tin tomatoes, chopped
  • 100g chopped sun-dried tomatoes
  • 50 milliliters water
  • 1 tablespoon cornflour
  • 4 breasts of chicken
  • a pinch of salt and pepper
  • crème fraiche (75g)

Instructions

  1. In a slow cooker, combine the onions, garlic, dried basil, canned tomatoes, and sundried tomatoes.
  2. Pour in the water with the cornflour that has been dissolved. Mix until all of the ingredients are evenly distributed.
  3. Lay the chicken breasts on top of the sauce and season with a pinch of salt and pepper.
  4. Cook the chicken for 3.5 hours on high or 5 hours on low, flipping halfway through.
  5. It’s ready to serve with cooked pasta topped with fresh basil and grated parmesan cheese after stirring in the creme fraiche.

Notes

Refrigerate leftovers for up to 2 days in an airtight container. This dish may also be refrigerated and then defrosted overnight in the refrigerator.
