They are far less sweet than muffins from the store, but they are soft and chocolatey. Additionally, they may be frozen and then quickly defrosted.
In the beginning, combine plain flour, cocoa powder, baking powder, and bicarbonate of soda in a big basin.
Melted butter, honey, egg, plain yogurt, orange juice and zest, and honey should all be combined in a jug.

Orange and Chocolate Muffins
Description

Ingredients
- 300g of white flour
- 2 tbsp cocoa powder
- Baking powder, 1 teaspoon
- Bicarbonate of soda, 1/2 tsp.
- 70g of butter
- Yogurt, plain, 175g
- Honey, 75g
- 1 large egg
- zest & juice of 1 orange
- 40g of chocolate chips on top of 50g
Instructions
- Set the oven to 180 fan degrees.
- A big bowl should be used to combine the flour, cocoa powder, baking powder, and bicarbonate of soda.
- Melt the butter in the microwave by adding it to a jug.
- Stir thoroughly after adding the yogurt, honey, and egg to the melted butter together with the orange juice and zest.
- Just enough mixing will ensure that the dry components are well blended after adding the liquid ingredients to them.
- 50g of chocolate chips are then added and folded through.
- The mixture should be divided among 12 muffin liners. I use silicone muffin liners to prevent sticking. Using an ice cream scoop is also the most convenient method for me.
- Add the last 20g of chocolate chips on top of the muffins.
- 22 minutes of baking time in the oven.
- Before removing from the cases, let them cool for a while.
Notes
For up to two days, these muffins will stay fresh in an airtight container. They will get a little bit hard and dry since they don’t include preservatives as store-bought muffins do. I soften them in the microwave for 10 seconds before serving.
They work well for serving as well. For up to two months, add to a freezer bag and freeze. In a few hours, they will thaw at room temperature.
