Instructions

  • In the bowl of a large food processor, combine frozen banana slices, frozen pineapple chunks, frozen mango chunks, coconut milk, and vanilla. Process for several minutes, stopping to pulsate or scrape down the edges of the bowl as needed to keep things going. The fruit may seem lumpy at first, but it will smooth out with time. Process for 3 to 5 minutes, or until the “ice cream” is smooth and creamy in appearance. Serve immediately by scooping into dishes and topping with toasted coconut and chopped almonds.

Notes

  • This recipe may also be made in a high-powered, heavy-duty blender if you don’t have a food processor.
  • I keep a carton of coconut milk in the fridge at all times. If you don’t have any, you may use ordinary milk or cream, almond milk, canned coconut milk, orange juice, or any other beverage. The liquid’s only function is to start the food processor or blender going. If required, add a splash extra liquid, but use as little as possible to keep the ice cream from becoming runny.
  • Preheat the oven to 350°F and put shredded coconut in a uniform layer on a baking sheet to roast it. Bake for 5 to 10 minutes, until flakes are lightly browned, looking carefully and tossing regularly.
  • The greatest time to eat banana ice cream is just after it’s been created. You may freeze leftovers, but the smooth, creamy texture will be lost. If you have to freeze it, breaking it up into bits and pureeing it again in the food processor before serving may assist to restore the original consistency.
