Is it possible for anybody else to become locked in a supper rut? This meaty, cheesy Tortellini in the Oven will come to your rescue!

You may assume that as a food blogger, it’s not a challenge I’d ever face. After all, I’m always working on new recipes. I have an extensive collection of family favorites. I also spend an excessive amount of time pinning recipes on Pinterest as part of my profession (have I mentioned how much I like my job?).


Despite all of this wonderful recipe inspiration, there are times when I just don’t know what to prepare for supper. And on such times, I open the freezer, look inside, and expect to hear anything.

This exact scenario played out a few weeks ago and, frantically flagging me down on the freezer shelf from between a bag of peas and a box of chicken breasts, was a package of cheese tortellini. And it was squawking, “Turn me into something good!”1649232728_634_Baked-Tortellini-Beefy-Cheesy-DELICIOUS Okay, so maybe it didn’t exactly happen that way.

Due to a combination of allergy medicines and sleep deprivation, I may be mildly hallucinogenic (because three kids and, you know, LIFE).

Maybe the frozen cheese tortellini was just hanging there, as it often does, and I got the bright notion to use it instead of noodles in a spaghetti-style pasta bake.

That’s precisely what I did. Say welcome to my delectable Tortellini in the Oven dish, which is packed with ground meat, sauce, and plenty of cheese!


How to Make Tortellini in the Oven

  1. Brown the ground beef and add it to your favorite canned spaghetti sauce. If you have homemade marinara on hand, you could easily use that instead.
  2. You may even go clever and add some finely shredded zucchini (or other vegetables) to the meat sauce to boost the vitamin intake, utilizing my favorite trick for concealing veggies in a meal. But please don’t tell my kids (or my husband) that I do this.
  3. Toss in some frozen cheese tortellini and some freshly grated mozzarella.
  4. In a baking dish, combine all of the ingredients. Add extra cheese on top and bake until hot and bubbling!


A Few Thoughts on Tortellini

It doesn’t get much easier than spaghetti and sauce for dinner!

But it does, since I didn’t have to dirty another pot by cooking the tortellini separately for my Tortellini in the Oven dish. I just washed it through a sieve with warm water before adding it to the meat sauce, and then baked it all together in the oven.

If that isn’t the definition of simple, I don’t know what is. And, as an added bonus, the kids enjoyed it. How can you go wrong with pasta, cheese, and a meaty tomato sauce (with hidden vegetables, of course)?!

But what if you don’t have any frozen cheese tortellini on hand? What if it’s already packed (dry) or refrigerated?

  • If you’re using tortellini from the pasta aisle, cook it according to the package guidelines until it’s al dente, then follow the rest of the recipe.
  • Refrigerated tortellini is practically the same as frozen tortellini that has been thawed under warm running water (which is what this recipe calls for). As a result, you shouldn’t have to make any changes!

  • Preheat the oven to 350 degrees Fahrenheit. Set aside a 3-quart baking dish that has been greased.

  • Brown the ground beef and garlic in a large saucepan over medium heat, breaking it up and turning regularly, until the meat is no longer pink. Fat should be drained. Garlic powder, dried basil, dried parsley, dried oregano, dried thyme, crushed red pepper flakes (if desired), salt, and freshly ground black pepper, to taste, season the meat.

  • Toss cooked ground beef with spaghetti sauce. To partially defrost frozen tortellini, pour them into a colander and run them under warm water for a minute. Drain the tortellini and add it to the meat sauce.

  • Remove the saucepan from the heat and add half of the shredded mozzarella to the mixture. Place the tortellini and meat sauce in the baking dish that has been prepared. Top with the remaining shredded mozzarella and grated Parmesan cheese. Bake for 20 minutes, covered in foil. Remove the foil and continue baking for another 20 minutes, or until hot and bubbling.


  • If you have fresh herbs on hand, feel free to use them instead of the dry herbs (and use three times the quantity of fresh herbs since fresh herbs aren’t as strong as dried herbs).
  • This approach may be used to add grated vegetables to the meat sauce if desired.
  • Without modifying the recipe, you may use refrigerated cheese tortellini instead of (thawed) frozen tortellini.
